Chipotle Beef Chili
During this Covid pandemic my mom & I have been talking and cooking lots.
She shared with me this chipotle beef chili recipe that she found the other
day and it’s hearty. It uses beef stewing chunks instead of ground beef.
Best of all it’s cooked in a crockpot.
To the crockpot add salsa, beef broth, chili powder, chipotle pepper, cumin,
garlic, onion, beef stewing chunks, & kidney beans.
Once all ingredients added, stir it up. Cover and cook on low for 8-9 hrs or
if you’re really hungry, cook on high for 4-5 hrs until beef chunks are
fork tender.
Next, grab you a ladle, bowl, and dish up. Add a dollop of sour cream &
shredded cheddar cheese. Guess what, it’s eatin’ time!!!
Chipotle Beef Chili Ingredients:
-1 jar (16 ounce) of salsa
-1 cup of beef broth
-2 tablespoons of chili powder
-1 tablespoon of cumin
-1 teaspoons of ground chipotle chili pepper
-4 garlic cloves minced
-1 large onion diced
-2lbs of beef stew chunks
-1 can of kidney beans, rinsed & drained
Salisbury Steak
In a large bowl, mix together ground beef, panko breadcrumbs, large egg,
ketchup, Dijon mustard, dried oregano, & kosher salt. Shape the mixture into
4 equal patties, about 3/4-inch thick.
In a large skillet, add olive oil over medium-high heat; add the patties and
cook, about 3 minutes per side until they get a nice golden crust. Transfer
to a plate.
Reduce the heat to medium and in the same skillet with the drippings, add
butter. Once melted, add in the flour and whisk until combined and no lumps
remain.
Reduce heat to medium-low and pour in the beef stock, whisking well. Add in
the ketchup, Worcestershire, onion powder, whisking to combine. Add in the
mushrooms, then simmer for about 5 minutes to thicken. Season with salt and
pepper, to taste.
Add the partially cooked steaks back to the skillet of gravy; cover and cook
another 10 minutes until cooked through.
Serve steaks over mashed potatoes with some of the mushroom gravy drizzled
on top and a side of broccoli. Guess what, it’s eatin time!!!
Salisbury Steak Ingredients:
-1 pound lean ground beef
-1/4 cup panko breadcrumbs
-1 large egg , beaten
-2 teaspoons ketchup
-1 teaspoon Dijon mustard
-1/2 teaspoon dried oregano
-1 teaspoon kosher salt
-1 tablespoon extra-virgin olive oil (for the skillet)
Salisbury Steak Gravy Ingredients:
-2 tablespoons unsalted butter
-2 tablespoons flour
-1 1/2 cups beef stock
-1 tablespoon ketchup
-1 teaspoon Worcestershire sauce
-1/2 teaspoon onion powder
-6 ounces sliced cremini mushrooms
-Salt and pepper , to taste
Guinness Pie:
-Start by preheating oven to 375 degrees. In a skillet over medium heat add
butter, sauté onions & garlic. Add carrots, celery, mushroom and remaining
butter and cook until mushrooms a dark color.
-Season beef pieces with salt & pepper. Add beef, flour, and rosemary to
pan, stirring often for about 5 mins. Add Guinness beer to just cover beef.
Cover pan and put in oven for 1 1/2 hrs. Remove from oven and stir in half
the cheese. Return to oven and cook for 1 hr.
Next part is pastry. While stew is cooking, sift flour, baking powder & salt
in bowl. Work cold butter into flour quickly. Add ice water, splash at a
time, until dough firm, wrap dough in plastic & refrigerate at least 2 hrs.
-Pour stew into baking dish, scatter remaining cheese across top. Roll out
dough to thickness of a cpu mouse pad and top it over stew. Pinch it close
around the edges, slash center lightly w/ a knife. Brush w/ egg yolk & bake
for 45 mins or until pastry is puffy & golden. Guess what, it’s eatin
time!!!
Guinness Pie Filling Ingredients:
-4 tablespoons butter
-2 large red onions
-4 garlic cloves, minced
-2 carrots, peeled and chopped
-2 ribs of celery, chopped
-10 mushrooms, trimmed and sliced
-3 pounds of rib eye steak, chopped into bit size
-kosher salt
-fresh ground pepper
-2 tablespoons of flour
-1 spring of rosemary
-2 can of Guinness beer
-1 cup of fresh grated cheese
Guinness Pie Pastry Ingredients:
-1 1/2 cups of all-purpose flour
-2 1/4 teaspoons of baking powder
-3/4 teaspoons salt
-1 stick very cold unsalted butter diced
-1 egg yolk, lightly beaten
Crockpot Taco Soup:
I’m sure you’ve heard of Taco Tuesday as Lebron James says but I bet you
haven’t heard of Crockpot Taco Soup. This soup consist of simple
ingredients, super easy, & packed full of flavor.
In a large skillet, heat olive oil. Sauté garlic & onions together. Add
ground beef to skillet and brown until cooked through.
Drain the beef mixture and add to crockpot. Add the corn, black beans, &
diced tomatoes into crockpot. Add salt, pepper, cumin, chili powder, & fresh
cilantro. Stir all those ingredients together until mixed well.
Heat on low setting of crockpot for 6 hrs. Grab you the biggest bowl you can
find. Serve with cheese, sour cream, avocado, & tortilla chips. Guess what,
it’s eatin time!!!
Crockpot Taco Soup Ingredients:
-1 yellow onion, diced
-2 tablespoons of olive oil
-4 garlic cloves
-1 (28oz) can of corn, drained
-1 (28oz) con of black beans, rinsed & drained
-1 (28oz) can of diced tomatoes
-1 teaspoon salt
-1/2 teaspoon of black pepper
-1 teaspoon of cumin
-2 tablespoons of chili powder
-1/4 cup of fresh cilantro finely chopped
-2 pounds of lean ground beef
-Topping: cheese, sour cream, avocado, tortilla chips
Beef Barley Soup:
I’ve often wondered if Beef Barley Soup was a Canadian dish. The only
reason I say that is because I’ve never had Beef Barley Soup until I got
to Canada and met my wife who makes a mean beef barley soup and I tell you
it’s absolutely amazing. Talk about a hearty and tasty soup.
In skillet over medium to high heat add olive oil and brown beef for about a
min or 2, don’t fully cook the beef.
In a crockpot, place carrots, celery, green pepper, onion, corn, garlic, and
green beans.
Next add the browned beef on top of veggies. Then combine tomatoes, barley,
parsley, beef bouillon, salt and basil over top of meat.
Next, add beef broth & DO NOT STIR. Cover and cook on LOW for 10-12 hours or
until beef is tender.
Next, grab your favorite soup bowl and a ladle to dish up. Serve with fresh
buns or rolls. Guess what, it’s eatin time!!!
Beef Barley Soup Ingredients:
-2 lbs beef round steak or 2 lbs beef chuck, diced
-2 tablespoons of olive oil
-2 cups chopped carrots
-1 stalk celery, diced
-1⁄2 green pepper, diced
-1 large onion, chopped
-1(19 ounce) can tomatoes
-1⁄2 cup frozen corn
-1⁄2 cup frozen green beans
-4 garlic cloves, minced
-2⁄3 cup barley
-1 tablespoon dried parsley flakes
-1 2 beef bouillon cubes
-2 teaspoons salt
-3⁄4 teaspoon dried basil
-5 cups of beef broth
Homemade Meatballs
My wife and I encourage our kids to help out in the kitchen with cooking.
One of our favorite thing to make together as a family are homemade
meatballs.
Ingredients you’ll need are ground beef, ground mild sausage, bread
crumbs, onion, Parmesan cheese, garlic powder, ground thyme, oregano, salt,
pepper, eggs, whole milk, & parsley.
Combine all meatball ingredients in a large bowl. Using your hands, mix
until fully combined. Take enough meat mixture in hand to roll into golf
ball sized or if your like me, your taking enough to roll into tennis ball
or even baseball size.
Place meatballs in slow cooker and submerge in your favorite pasta sauce.
Cover and cook on high for 2-2½ hours, or until meat is fully cooked. Serve
by itself, make meatball subs, over pasta. Guess what, it’s eatin time!!!
* 1 lb beef (455 g)
* 1 lb mild sausage (455 g)
* 1 cup breadcrumb (115 g)
* ⅓ cup onion, chopped (50 g)
* ¼ cup parmesan cheese (25 g)
* 1 teaspoon onion powder
* 1 teaspoon garlic powder
* 1 teaspoon dried thyme
* 1 teaspoon dried oregano
* ½ teaspoon salt
* ½ teaspoon pepper
* 2 eggs
* ½ cup whole milk
* ½ cup parsley
Grilled Hawaiian Teriyaki Burgers:
This burger was inspired by my travels to the Hawaiian Islands. Once Covid
has settled down, I’m heading back there.
For the burgers:
Combine the ground beef with grated carrots, scallions, ginger, soy sauce
and sriracha sauce.
Form into 8 equal sized patties and brush on olive oil.
For the teriyaki sauce:
Combine cornstarch in cold water and dissolve. Set aside.
Mix soy sauce, pineapple juice, brown sugar, grated ginger and garlic in
small saucepan over medium heat; bring to a boil and simmer until sauce
reduces, about 15 to 18 minutes.
Add cornstarch water mixture and simmer until thick, about 2 minutes. Remove
from heat and set aside to cool.
Get the grill nice and hot.
Place the patties on the grill and cook for about about 5 to 7 minutes on
each side, or until burgers are cooked to your liking.
While the burgers are cooking, grill the pineapple slices for about 2 to 3
minutes on each side.
To serve, place a piece of lettuce on the bottom of each burger bun. Top
with the cooked burger, teriyaki sauce, and grilled pineapple. Serve with
sweet potato fries. Guess what, it’s eatin time!!!
Grilled Hawaiian Teriyaki Burger Ingredients:
-2 lbs 93% ground beef
-1/2 cup grated carrots
-1/2 cup chopped scallions
-1 tsp fresh grated ginger
-1 tbsp reduced sodium soy sauce
-1 tsp sriracha sauce, or more if you like it spicy
-8 slices fresh pineapple
-8 burger buns
-8 lettuce leaves
For the pineapple teriyaki sauce:
-1/2 tbsp cornstarch
-1/4 cup cold water
-1/4 cup low sodium soy sauce
-1/2 cup pineapple juice
-3 tbsp brown sugar
-1/2 teaspoon fresh grated ginger, very fine
-1 small garlic clove, minced
